Yeah, that's one of the layouts that I had in mind. I also was thinking of the one in Chester & Hester's Dinosaur Treasures too. I only saw that one operating a few times and that was back during my first trip to Animal Kingdom in 1999 when the layout and whole park was still new. Knotts Berry Farm is another theme/amusement park that cannot keep their layouts properly maintained and operating. They had an overhead layout in their toy and train store in Ghost Town and it did not work for very long. Like so many others, unfortunately it just became a giant dust collector.
The only place that I can remember that actually maintained their G scale layout daily was the old Po Folks restaurant in Buena Park in front of Movieland Wax Museum, just down the road from Knott's Berry Farm. I remember being there right before closing time and I chatted with the guy that used to come into the restaurant every day to perform maintenance on the layout. That was pretty exceptional based on my observations of so many other large scale layouts in public places.
The McDonald's next door to Knott's Berry Farm also operated their LGB layouts every time that I went there. They must have had someone maintaining them but I never saw anyone doing it. I have not been inside that McDonald's in a few years so I do not know if the trains are still operating.
